Brown Butter & Apple Spiced Blondies - Fresh In Your Fridge

Warm, cozy, and full of unique fall flavours. These blondies are sweetened with a low glycemic coconut sugar and filled with high fibre tender chunks of apple – the perfect anytime treat. 

Brown Butter & Apple Spiced Blondies

Makes 9 servings.

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup packed coconut sugar
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon sea salt
  • 1 large pink lady apple, peeled and diced

Directions

Step 1

Brown the butter: Melt the butter over medium heat, cooking until golden and nutty, about 4-5 minutes. Pour into a mixing bowl to cool slightly for 5 minutes. Preheat your oven to 350°F (175°C).

Step 2

Whisk the wet ingredients: Once the butter is cooled slightly, whisk in the coconut sugar, egg, and vanilla until smooth.

Step 3

Combine dry ingredients: In a separate bowl, mix the flour, baking powder, cinnamon, nutmeg, and salt.

Step 4

Mix and fold: Add dry ingredients to the wet ingredients and fold gently until just combined. Stir in the diced apple.

Step 5

Bake: Spread batter into a parchment-lined 8×8″ pan and bake for 25-30 minutes, or until the top is golden and a toothpick comes out clean. Let cool slightly before slicing.
