Minimal Prep, Big Flavour
Bright, herbaceous, and full of flavour – this omega-rich salmon dish is fast enough for a weeknight dinner and elegant enough for company. You can use this marinade for just about any fish or even a pasta salad!
Lemon-Herb Dijon Salmon

Makes 3-4 servings.
Ingredients
- 1 – 1.5 lb wild salmon fillet
- 1/2 – 3/4 cup fresh herbs, finely chopped (parsley, cilantro, dill)
- 2 tablespoons olive oil
- 1 heaping tablespoon Dijon mustard
- Juice of 1/2 lemon
- 1 large garlic clove, minced
- Salt & pepper, to taste
- Pinch red pepper flakes (optional)
Directions
Step 1
Prep oven: Preheat oven to 350°F (175°C). Line a baking tray with foil or parchment and place salmon on it skin-side down.
Step 2
Make herb paste: In a small bowl, mix herbs, olive oil, Dijon mustard, lemon juice, garlic, salt, pepper, and red pepper flakes. Taste and adjust seasoning as needed.
Step 3
Spread & bake: Spread the herb mixture over the salmon. Bake for 10-12 minutes, or until the internal temperature of the salmon hits 125°F (medium-rare).
Step 4
Serve: Let rest briefly before slicing. Delicious with rice, roasted potatoes, or steamed veggies.
Notes
Not a fan of cilantro? Change up the herbs however you like, try adding basil, oregano, or thyme.
