Vegan Peppermint Hot Chocolate - Fresh In Your Fridge

Vegan Peppermint Hot Chocolate

Makes 2 servings.

Ingredients

  • 2 cups unsweetened almond milk or other plant-based milk of choice
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon coconut sugar
  • 1/2 cup vegan chocolate chips or chopped chocolate
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon peppermint extract
  • Pinch of salt

Directions

Step 1

Warm and mix: Place almond milk (or milk of choice), cocoa powder, and coconut sugar in a small saucepan. Heat over medium-high heat, whisking to combine all ingredients. 

Step 2

Melt chocolate: Once simmering (about 5 minutes), turn heat down to low and add in the chocolate chips. Whisk until the chocolate has melted. 

Step 3

Add flavour: Turn off the heat and add the vanilla extract, peppermint extract, and pinch of salt. Whisk to combine. Taste and adjust sugar, vanilla, and/or peppermint as needed. Pour into mugs to enjoy!

Step 4

Optional garnish: Top with shaved vegan chocolate, crushed peppermint candies, vegan marshmallows, fresh mint, or coconut whipped cream for extra cheer.
