Sweet, Savoury, and Deliciously Crunchy

This super crunchy seed back is not only delicious on its own, but also incredibly versatile. There are so many ways to use it and easily add a boost of healthy nutrients to your meals. Sprinkle it over your morning yoghurt, crumble it into salads for extra crunch, or even add a handful to your ice cream – there are endless ways to enjoy these tasty clusters. 

Already naturally vegan and gluten-free, this seed bark is perfect for busy days when you need something quick and nourishing on hand. Whether you’re heading out the door in the morning or just don’t have time to think about adding extra fiber and nutrients to your meals, this is an easy, crunchy solution.

Store in an airtight container in a cool, dry place for up to a couple of weeks, and you’re all set.

 

Sweet & Salty Seed Bark

Prep time: 5 minutes
Cook time: 20 minutes
Total time: 25 minutes

Makes 10-12 pieces.

Ingredients

  • 1 cup pumpkin seeds
  • 1/2 cup dried coconut flakes
  • 1/2 cup sliced almonds
  • 2 tablespoons chia seeds
  • 4 tablespoons maple syrup
  • 1 teaspoon salt (adjust to taste)
  • Optional: hemp seeds or sesame seeds to sprinkle

Directions

Step 1

Preheat your oven to 325°F and line a baking tray with parchment paper.

Step 2

Mix together all of the nuts, seeds, coconut, and salt in a bowl.

Step 3

Add in the maple syrup. You can also opt out for honey here instead if desired or use a mix of both to give it a nice honey crunch!

Step 4

Mix everything together thoroughly so the maple has coated all the nuts and seeds, this will help bind it together when baking.

Step 5

Pour the mixture onto your baking tray and spread out into a thin layer, try to get it under 1 cm. Optional: Sprinkle hemp seeds or sesame seeds on top. 

Step 6

Bake the mixture for 20 minutes, rotate the baking tray halfway through so the heat is distributed evenly. Remove from oven when you see browning. The bark may seem soft when you take it out, but will harden as it cools.

Step 7

Once cooled, carefully break the bark into desired sized pieces and enjoy!

 

TIPS

*You can substitute out the nuts or seeds for another desired nut/seed, except for the chia seeds! They will act as a binder when baking the bark and help keep everything together.

*If you want a sweeter addition, drizzle some melted chocolate over the top of these once they have cooled.
